Sept 1 - 6

Sorry for the long delay. I had a few roll-overs since getting back from our trip and am hoping to make it to the store tomorrow. I'm also trying to figure out my grocery/menu schedule now that school is starting! Right now I think Tuesdays will be the day.

Here's what I have to get us until then:

Mini Taco Cups

I got this recipe from one of Keenan's cousins. Enjoy :)

24 wonton wrappers
1 lb ground beef or turkey
taco seasoning (I prefer to make my own as opposed to using the packets)
2 T salsa + more for serving
8 oz shredded cheese such as cheddar or montery jack
Your favorite taco toppings: sour cream, guacamole, salsa, cilantro, etc.

Brown and season your meat as you would for tacos. Stir in the 2 T salsa.

Preheat oven to 425. Seperate wrappers and place/fold into mini muffin cups. Fill cups with a few spoonfuls of taco meat. Top with shredded cheese. Bake about 8 min or until wontons are golden and crispy. Remove from oven and serve with your favorite toppings.

Makes 24 appetizers or 4 dinner servings :)

Aug 15 - 24

Review time! I absolutely loved the mini taco cups. I'm sure most of it is due to my love of Mexican food and even more so my love of condiments, but still - they were great and fun! (I'll put the recipe in a seperate post.) See?



Next up, the Pinwheels with Roasted Veggie Sauce. Another hit! The flavor was amazing and it was almost like a cream sauce without actual cream. I'm going to have to save this recipe for when it cools off, though. Roasting veggies at 400 degrees for 40 minutes is not the best idea in 105+ weather!

And last, but certainly not least, the Zuccini and Ricotta Gallete. Oh. My. Goodness. The crust was so buttery and flaky and the ricotta/cheese filling was rich and creamy. I'm sure it's not the best for you so it's definitely a treat. Not to mention all the prep time that goes into it. So worth it though. I plan to try a tomato/basil version next time. Yum!

I have 10 meals planned for the next week and a half. We're off on another adventure and I'm hoping to only make one quick trip to the store for basics after today. Keenan's out of town 3 nights this week and I'm still battling morning sickness so most of these are quick and easy.

Aug 9 - 14

After getting home much later than planned, I just don't have the energy to make/plan a 2 week menu this go-around. Luckily some recipes caught my eye earlier this week to help me on my way.

Aug 2 - 8

Our 2 week menu worked out great. I really enjoyed only 1 major grocery trip during that time. Towards the end we wound up ordering pizza and having a dinner out that gave me some roll-overs for this week. I don't have the energy right now to make a 2 week menu let alone shop for one. I picked some easy menu items to get us to Sunday when hopefully I'll be up for shopping again.

July 19 - 28

Before I forget, I'll start with reviews. The five-spice burgers were a huge hit all around. I couldn't believe the kids actually ate them up! Of course, they didn't eat the mushroom/cabbage topping, but still I was surprised. The Salsa Verde Steak Burritos were also a big hit and we now have plenty of left-overs. It'll be turned into enchiladas this week :) I didn't get around to the veggie pie as I realized my yogurt was expired when I went to make it - oops. I may try it another time, but for now I'm just going to use the veggies in other things this week (if they're still good!). I also haven't tried the lemon ice cream yet, but I'm hoping to tomorrow!

This menu should get us through the next week and a half with leftovers and probably a meal out sometime.

Our unexpected 2 week menu turned out great! Unfortunately I don't have the energy tonight to make another one. We have a trip coming up at the end of the month so I'll make my next menu gets us through until we leave - just shy of 2 weeks.
