After getting home much later than planned, I just don't have the energy to make/plan a 2 week menu this go-around. Luckily some recipes caught my eye earlier this week to help me on my way.

Sorry to be MIA last week. Between some extra things in our schedules and roll-over meals, I ended up sneaking in a quick grocery trip mid-week and flying by the seat of my pants to get us through. Taking the week off from menu planning really messed me up, though. I was just not motivated to get back at it tonight (I'm trying to switch my shopping day to Sunday as it's getting quite difficult to shop with the girl). Anyway...here's the plan for the next week :)

A quick review to start off this week. The sausage and tomato risotto was a big hit with us. It was basically like a pasta dish with sausage and a tomato sauce only with rice instead of pasta*. Risotto is becoming a favorite dish of mine - so rich and creamy. I just wish it wasn't so labor intensive. It's definitely worth the time and effort, though. Yum yum :)
* Update: I forgot to mention that I replaced the plain chopped tomoatoes with fire-roasted and garlic flovored ones. They caught my eye in the store and I think they really helped round out the dish.

* Update: I forgot to mention that I replaced the plain chopped tomoatoes with fire-roasted and garlic flovored ones. They caught my eye in the store and I think they really helped round out the dish.

No reviews again this week, but I do have a handy dandy tip I tested out from Yia Yia. I typically buy ground beef in bulk, divide it into 1 pound portions and freeze it. YY mentioned that she cooks up the ground beef (lightly seasons it), then divides it and freezes it for quick and easy meals. I gave it a go since all we really use it for is spaghetti sauce and tacos. It's been great! Keenan wasn't home for dinner last night so I opened up a can of spaghetti sauce, tossed in some of the beef, cooked up some noodles and popped some frozen peas in the microwave. Dinner was ready in less than 15 minutes and both kids ate it up! I have to admit that I didn't divide up the ground beef - I just put it all in a 1 gallon zip lock bag - and that made for some trouble. Next time I'll definitely put it in sandwich size baggies then in the gallon one. Lesson learned :) Thanks Yia Yia! I still plan to freeze raw ground beef to have on hand for burgers or meatballs, but I suppose I could prep and freeze those as well!

My parents and sister are coming for a visit this weekend so I'm pulling out some of our new favorites even though we've had them recently.
Wednesday - Grilled Tuna Steaks with Asparagus and Wild Rice (gotta love the sale ads!)
Thursday - Italian Sausage Spaghetti with Salad and Garlic Bread
Friday - French Dip Paninis with Carrot Sticks and Chips
Saturday - Turkey Meatloaf with Mashed Potatoes
Sunday - Eat Out (BBQ!)
We'll also be enjoying "KeenMcMuffins" and Breakfast Burritos along with chocolate cake this weekend. Yum!
