Oct 19 - 25

Ok...I think things are back on track around here. This week's menu is pretty low-key as I get back into the swing of things not to mention Keenan being out of town a couple of nights this week. Thanks again to those of you who contributed your menus - it really helped get me started and made for quick work :)

Hot Dogs and Baked Beans

Chicken Fingers with French Fries and Broccoli

BBQ Chicken with Mashed Potatoes

Stuffed Flounder (Aldi find! Fish sticks for the kids.) with Rice

Are you going to put plastic spiders on the nachos, like Cheeky Kitchen did? ;) (At first I thought, "Oh dear!" but then I thought it was kind of funny - and like CK said, much better than eye-ball soup or something!!) It does sound like a tasty recipe - if only my husband would eat Mexican!

Maybe if I make it again Halloween night ;) Last year I made "Mummy Dogs" (hot dogs wrapped in strips of crescent dough with mustard dots for eyes) and "Witch Fingers" (sweet potato fries in a parmesan/breadcrumb coating). I don't think I could handle eye ball soup either!
We just need to come up with a creative name for it like cheesey corn layers. That's what we do with the kids sometimes and it works like a charm! ;)
